This is a blog about home canning—or "putting up" as one might say where I'm from—and it will cover jams and other fruit preserves, pickles and briny things, canned vegetables (above all tomatoes) and the complement of condiments that includes relishes, sauces, salsas and those related preparations that result when you chunk bits of seasonal produce and preserve them in a syrup either piquant or sweet.

Sign Up for Private Preserving Lessons!

I am tickled pink to announce a series of SEASONAL PRESERVING CLASSES with Valerie Gordon, proprietor of Valerie Confections.

Valerie is a top-drawer jammer whose products are elegant, refined and intense. I've learned a lot in her kitchen. She'll lead the sweet preserve segment of the class, and I'll lead instruction on piquant preserves—pickles and such. Our four seasonal classes start with a spring curriculum of STRAWBERRY RHUBARB JAM and PICKLED ASPARAGUS on Saturday, April 10.

This is a real hands-on class, so space is very limited. Won't you join us?

SEASONAL PRESERVING CLASSES

Spring Preserving: Strawberry Rhubarb Jam & Pickled Asparagus Spears

Saturday, April 10th

2 - 5 pm

$100 per person

Class size is limited to 12 students.

We're very excited to announce the beginning of our Valerie Confections Seasonal Preserving Classes.  Owner Valerie Gordon and Kevin West of the blog Saving the Season, will be teaching a beginning preserving class, introducing students to the art of home canning.  We'll be offering one class each season incorporating seasonal farmers markets fruits and vegetables. 

During our first class we will be making Strawberry Rhubarb Jam and Pickled Asparagus Spears.  The class will take students through the selection of fruits and vegetables, a hands-on demonstration of the canning process, a discussion of ways to incorporate preserves into your every day cooking, and a celebratory tasting of the finished product along with paired accompaniments and wine.   

Classes are held at the Valerie Confections kitchens at 3360 West 1st St, Los Angeles.
